In this cooking class, fresh egg pasta from Emilia will take center stage, guided by an experienced couple with a background in the Michelin-starred restaurant business. They have now dedicated themselves to their artisanal Pasta Lab and the new trend of “pasta design”, excited to share their passion and knowledge on this new adventurous culinary experience.

From North to South, pasta can be categorized into short, long, fresh, dry, handmade, filled or unfilled, and even with or without eggs. This variety showcases the creativity and artistry that locals have developed over centuries in what is arguably one of the most unique gastronomic landscapes in the world.

It’s also important to note that each pasta dish has its specific sauce or condiment. While this may seem rigid, it stems from history, geography, local ingredients, and cherished family recipes. In Naples, located in Southern Italy, you can enjoy delicious Paccheri and Spaghetti with seafood at a dreamy seaside restaurant, where the Mediterranean breeze cools you off during the hot summer months. In Modena and Bologna, in Northern Italy, the colder winter months call for comforting dishes like tortellini or baked pasta options, such as Lasagne Verdi and Rosette, which reflect the local gastronomic culture and resources. In recent years, fantasy and creativity have led to the innovative mixing of colorful doughs and shapes, resulting in unique creations like Tortelloni, Tagliatelle, and Tortellini, each showcasing new flavors and colors when paired with the right condiments. In this pasta class, we may create a Rose-like Tortellone using multiple colors derived from the ingredients used for the dough. We may also incorporate edible flowers and design Tagliatelle noodles that resemble works of art. This class highlights the versatility of pasta, allowing us to explore new flavors and embrace fresh ideas to elevate our dining experience.
