Parmigiano Reggiano (PDO) and Traditional Balsamic Vinegar of Modena (PDO): a typical food match which is commonly found on the dinner table of locals in Modena, two products related to a history with strong roots in the Modenese territory and carried on over many generations.
What should you expect?
A family-run Acetaia (Acetaia is the name of the place where they produce balsamic vinegar or the attic where the aging barrels of balsamic are preserved), the wish to welcome visitors from any part of the world as part of the family, taking special care of the true creators of balsamic vinegar, acetobacteria.
In this tour we will understand that in order to create the unique balanced taste of authentic Parmigiano Reggiano cheese it takes the expert eye of the “Casaro” (cheese dairy-master), who needs in turn the freshest milk.
We’ll see how many steps are involved in the production, a lot of operations that still rely on experience, work by hand, devotion.
From the warming up of the milk to the maturation room storing the endless cheese wheels of Parmigiano, to finish with tasting of Parmigiano Reggiano 3 different aging and warm freshly-made ricotta (every day).
Next stop is at a family-run Acetaia to learn about Modena’s people tradition to make Traditional Balsamic Vinegar, which is much more than a vinegar. It takes at least 12 year of aging, in different wooden barrels, by transfering the product and refilling the barrels in a very specific procedure; and after 25 years it can be called “extra-vecchio” with its golden capsule, having achieved a perfectly-balanced balsamic aroma that makes a perfect finish touch in drops to enhance so many gastronomic recipes, like locals in Modena do, but also on your local dishes, wherever you are from.
The tour includes tasting of Balsamic aged over 12 and over 25 years by the spoon, and matched to the entire menu offered by the producer at their family Villa, from appetizer to dessert, inspired on Modena’s traditional cuisine and suitable food match to the Balsamic.
