The city of Parma has a strong gastronomic value, a story that started a long time ago in a land that has always considered farming something precious to preserve. The inhabitants of Parma area have been among the first real ambassadors of premium Italian quality food products across the world.

In fact, Parma has been recently been designated a UNESCO Creative City for Gastronomy.

PDO -Protected Designation of Origin- certified Parmigiano Reggiano (parmesan cheese) and Prosciutto di Parma (Parma ham) were born and are made in the area of Parma.

If the Hills of Parma are the perfect place to make Prosciutto – hams are hung on frames in well ventilated rooms with large windows to dry with the currents of air coming from outside – the picturesque villages of the Bassa Parmense – flatland – is where the King of Salami Culatello is artisanally made. Humidity and foggy winters help to create the noble moulds that make its aroma even more intense.

Our Tour around Parma focuses on the most distinctive products of Parma: Parmigiano Reggiano, Prosciutto Crudo di Parma, and Culatello di Zibello.

We won’t just taste high-quality products, but also visit the farm and the cheese dairy and learn about the production of Parma’s bests.

We will discover all the productive steps that haven given Parmigiano Reggiano its nickname of “king of cheeses”, a semi-fat non pasteurized hard cheese characterized of a balanced taste, good for kids, and above a certain aging good also for lactose-intolerant people.

Besides the Parmigiano Reggiano cheese dairy www.bertinelli.it we will drive 5mins to arrive at their farm to see and learn about how they are bred, how they must be fed, the so many restrictons imposed by the Consortium to have the best quality milk.

Peaceful cows (the farm complies with the Animal Welfare standards set by EFSA, the European Food Safety Authority based in Parma), cows eating alfa-alfa and hay as the main make high-quality milk. Good milk, good cheese.

No need for preservatives! You will discover all the details and steps that make this possible, always with experienced local people, cheese masters and tasters who still have to most important approach in the cheese-making.

Modern technology helps a lot, but human’s know-how is impossible to reproduce; it can be only passed on from generation to generation.

The tour ends with the lunch including Parma’s most typical products we have learnt about:

Parma Tagliere with Culatello, Prosciutto di Parma, and other local salumi, with Parmigiano Reggiano different aging, wine, the unmissable Torta Fritta bread with its own complements….and as a sweet note to finish, the Artisanal Gelato made with fresh milk – zerokm milk – served with three different toppings.

This half-day tour is ideal if you are accommodated in Parma or passing by Parma. Also, Parma is well-connected by train to Modena and Bologna.
