Explore Modena and The unexpected Tortellino
Tortellino or Tortellini (plural, as servings are generous) is probably the most famous and historic dish in the gastronomy of the towns of Modena and Bologna, which are still arguing to claim its paternity. Well, it seems that the village of Castelfranco dell’Emilia (now under Modena but belonged to the province of rival Bologna until 1929) has been officially declared homeland to this fascinating stuffed pasta – traditionally served in capon or hen broth – inspired by Venus’ belly-bottom and supposed to resemble it in the shape.
Like Lasagne or Tortelloni fresh pasta, Tortellini are handmade by experienced local “sfogline” pasta makers who pass on and on this important tradition. And the work behind is impressive and reflects Modena’s finest gastronomic culture.
That said, we’d like to celebrate Tortellino in its highest expression in this new (not only food) tour.
Join us on a journey of crafting one of Italy’s most iconic food, the Tortellino.
Historic covered food market Mercato Albinelli will be our first stop to enjoy a true market experience where local housewives daily do the shop, after enjoying a truly Modenese Must : Cappuccino & Gnocco Fritto, with Prosciutto as well.
While exploring Modena’s elegant streets among street food and “Botteghe Storiche” food temples, we will enjoy also tasting of authentic Parmigiano Reggiano Cheese and Traditional Balsamic Vinegar of Modena.
Then, it will be all about the Tortellino!
We will go to a historic Bottega to learn to make by hands a unique leather “Tortellino” with our “arzdour Giorgio” in an easygoing 1-hour lab, to let you a special memory of Modena: your leather Tortellino key-holder, made by your own hands.
Then, it will be the turn of the proper Pasta Tortellino to enjoy in broth or Parmigiano cream while toasting together with a glass of good Modena Lambrusco wine!
