A gastronomic experience

to cook with seasonal homegrown food

 

Cooking means Tradition, Eating Local and Seasonal Food, a constant pursuit of what our nature can give us. Spring, Summer, Autumn, Winter; every season gives us the opportunity to get in touch with nature and create food culture.

This is the essential introduction to our Farm to Fork Cooking Class in which we will plunge into the rural lifestyle of a gorgeous agriturismo located on Bologna hills dating  back to the Middle Age, slowly and patiently restored.

Your Italian home, in a word.

This farm is deeply connected to the Slow travel – Eat local concept, so much so we will taste natural wines produced by this farm, honey by bees, smell lavender, and pick vegetable/fruits grown seasonally, including tomatoes, zucchini, squash, a variety of local herbs including fennel, basil, rosemary, mint. Foodies’ heaven!

The host’s aim is creating a true biodiversity environment.

Care for the environment. Care for whoever comes in.

Now the real fun begins: with Italy’s music soundtrack from the ‘60s, we  would make a full-menu, focaccia, fresh-egg pasta from flour and eggs, dessert, all of it, based on seasonal ingredients and chef’s inspiration.

As we cook, we would dance and chat, and every time, we would decide the fresh-egg pasta style to make.

“La sfoglia deve essere sottile abbastanza da vedere San Luca”, is the keyword in rolling the dough” quoting a popular Bolognese saying which means that the rolled dough should be thin enough to be able to see the Basilica della Beata Vergine di San Luca church located on famous Colle della Guardia, a symbol for Bologna’s people (not really behind the corner).
