If you have fallen in love with Emilia-Romagna, Modena, and Bologna, after watching Stanley Tucci Searching for Italy, let us confess, we have too!

His trip across Italy to discover the food, the people, their past, which he describes as “unique” has been informative, intense and sooo funny, just like him. “Oh! So good… It’s a bomb… Will you marry me?” – after tasting authentic Tagliatelle with Ragù, to mention a few of his words that made us laugh loud. There are no words to thank him and the people who designed and produced such a successful show that has attracted so many visitors, travelers, and food lovers to the Emilia-Romagna region as a less conventional new foodie destination.

So, we have designed a new Exclusive Foodie Tour, also based on reviews, magazines by eminent Gastronomy Experts, celebrities, Chefs, from Italy and at an International level, just like American Chef, Author and Television personality, David Rosengarten who pioneered such huge potential in his article Italy’s Greatest Gastronomic Treasure, Emilia-Romagna (forbes.com) as early as in 2013.

FOODIES PARADISE IN THE TUSCANY-EMILIA APENNINE REGION – A PERFECT DAY TRIP FROM TUSCANY, SPRING  TO FALL.

Rosola Zocca – Why this Parmigiano Reggiano cheese is considered so special.

We will drive 30 miles from either Bologna or Modena to arrive at Rosola cheese dairy in the Apennine mountain, where cows pasture freely and eat hay, alfa-alfa including the tiny flowers that characterize the mild flavour of this special Parmigiano Reggiano cheese.

Hay to cheese, milk-cows are of an authoctonous local breed that the community decided to preserve: Cows are of a Slow Food protected breed called Vacca Bianca Modenese, grazing freely – so much so our Chef Massimo Bottura, declared Best Chef in the World with Osteria Francescana twice in a row, has been coming here for years to buy his Parmigiano. “Smell, Smell, Smell” – he says to Tucci right after the real-time opening a whole cheese wheel, adding one more good reason to buy it here: help the few farms that keep growing this almost forgotten cow breed to avoid extinction, despite the small milk production.

In the Maturation Room we will learn how Parmigiano Reggiano is tested and approved to be marketed as “DOP-certified”, and enjoy outdoor an abundant tasting including 7/8 types of cheeses, including Parmgiano Reggiano different aging with a bottle of semi-sparkling Bologna Pignoletto or similar suitable wine – perfect match for this late “grand déjéuner”.

AS A GOURMET LUNCH, BOLOGNA AND MODENA’S GASTRONOMY SYMBOL: TORTELLINI AND LOCAL CHARCUTERIE

Then, we’ll drive 5 mins to a historic, highly-rated family-run Osteria restaurant – to enjoy a unique culinary experience for lunch including the finest local charcuterie, seasonal food and Tortellini all seasons – in Parmigiano Reggiano cream or in broth (“in brodo” in Italian).

Tortellino is the most iconic symbol of Italy’s gastronomy for his long history, the top-quality ingredients of a fresh-egg stuffed tiny pasta size and its special and patient preparation by hand: rolling, cutting and twisting it as Venus belly-bottom…. Why?

Storytelling will be always part of the-entertaining part with our guests, including stories and reasons for such a historic rivalry between Bologna and Modena also for food….even though you know that Italy’s heritage is so varied that every little town has something to say, and everybody will say that the best food is always at their mom’s!

Massimo Montanari, currently Professor of Medieval History at Bologna University, is a scholar in Food studies. His interest in the subject stems from his researches and studies in Medieval Agrarian History. He has been invited as visiting professor to a number of leading universities in Europe, Japan, the United States, Mexico and Canada.

If you watched Searching for Italy, Bologna & Emilia Romagna episode, 1st season, you probably heard about Pellegrino Artusi, considered the father of Italian Cuisine because he was the first to include recipes from all the different regions of Italy in a single cookbook titled La scienza in cucina e l’arte di mangiare bene (“The Science of Cooking and the Art of Eating Well”).

THE BLACK GOLD OF MODENA

Time to drive down to valley, and enjoy the landscape to arrive in Modena area,  gorgeous Vignola Medieval village to discover a Must in Modena’s traditions and history: Traditional Balsamic Vinegar. We will visit a 4th generation family-run Acetaia (the place where Balsamic patiently rests for over 12 years and over 25 years following a specific method with rincalzi and travasi to become the so-called Black Gold of Modena.

Have you taste Modena Balsamic in your Country? Well, this experience is aimed at showing you the authentic Traditional Balsamic Vinegar of Modena, DOP-certified, and show you that Balsamic is forever and has an endless range of uses in the kitchen to give your dishes that special touch.

At this point, approx 4-4,30pm the tour would be over. BUT if you want to extend your culinary tour to Modena’s typical flavors, you can enjoy a free walk in Modena’s gorgeous historic centre, and we can book a table for you with menu à la carte at one of our favorite NEW emerging restaurants in Modena that is conquering locals and foreign visitors, Piccola Osteria Zémian : few tables, great service, tradition & creativity perfectly-merged. Davide and his staff are friendly and passionate, and they all speak good English. We will take care of the booking; you can pay restaurant directly on site.

After dinner, you could really say that you have Bologna and Modena’s gastronomy running through your veins!

If you are accommodated in Bologna, we can book transfer with private driver, or taxi to Bologna after dinner; alternatively,  trains running MODENA >BOLOGNA take only 20-30mins and the last train is at 11pm (to be checked based on the season).
