The Traditional Balsamic Vinegar of Modena and Artisanal Cured Meats – Morning or Afternoon Tour
Two Classics of Modena’s gastronomy that we highly recommend if you want to eat like a local are Traditional Balsamic Vinegar and a Selection of Local Cured Pork Meats – often served on a stylish wooden board – “Tagliere di Salumi” in Italian.
Either this is a just a snack before dinner or a proper lunch, the Modenese people love having Parmigiano Reggiano cheese shaved with drops of Traditional Balsamic Vinegar, and the finest local cured meats to match “Tigelle, Crescentine or Gnocco Fritto” a typical dish from the Modenese Apennine mountains.
This Half-Day Food Tour combines two intense experiences on food traditions in the Emilia Region with a guided tour at an old and family-run Acetaia (producing Balsamic Vinegar) and at a small artisanal Salumificio (Factory producing Cured Pork-Meat) at the foot of the Modenese Apennine mountains.
The first experience is the intimate world of DOP-certified Traditional Balsamic Vinegar (the so-called Black gold of Modena) with the tangy aroma of vinegar when it’s still young, the intense aroma as it ages, and the perfectly balanced flavor in the mouth after aging for at least 25 years – tasting the “Extra Vecchio” version of Traditional Balsamic Vinegar.
Then, we will meet a passionate and experienced (the seventh-generation) Food Artisan who makes local salami and cold-cuts in the most artisanal way possible. He love using his hands, creating new recipes and flavors that must remind you of our beautiful Emilia region.
The Guided Tour at the Salumificio ends with a tasting experience on the artisanal cured meats produced into a Light Lunch including pairing of local wines.
As a silent –but equally important – actor in this tour, we cannot avoid to mention the beautiful landscape of Modena’s countryside and the Emilia region. The warm shades of Autumn coloring the hills, the typical white colour of the cherry blossom in spring, the winter fog which softly envelops the Po Valley, and the Summer sun beating down on the hay bales just after the harvest.
