Parmigiano Reggiano and balsamic vinegar

Parmigiano Reggiano (PDO) and Traditional Balsamic Vinegar of Modena (PDO): a typical combination which is commonly found on the dinner table of Emilians, two products related to a history with strong roots in the Modenese territory and carried on over many generations.

Patrizia runs the family Acetaia (where they produce balsamic vinegar) and dreams of passing down her love and respect for nature to her grandchildren. She takes special care of the acetobacteria, which she considers the true creators of balsamic vinegar.

Ettore, together with his two daughters Fabiana and Giada, works with determination to create a Parmigiano with a character of its own, taking care of every small detail, as these make all the difference.

The tour includes a guided tour of a dairy and an Acetaia and ends with lunch in a traditional Trattoria where we will sample Parmigiano and Balsamic Vinegar in typical Emilian dishes that exalt the flavour of the two products more than any other.
