Culinary Holiday in Emilia Romagna
Our culinary holiday in the Emilia-Romagna region starts from Bologna “The Fat, the red and the Learned”. The learned for the oldest university of Europe; the red for the red-color roofs and buildings, the fat for its rich food and cuisine.
In recent years, Bologna has been often defined the world capital of food, or the ultimate foodies destination. Here, everyone can eat the authentic Tagliatelle al Ragù Bolognese, (NOT the fake version Spaghetti Bolognaise), Tortellini in brodo, Mortadella and Salame rosa cured meats, and artisanal Gelato.
Bologna is the starting point of our culinary trip to discover the most typical food and cuisine of the Food Valley of Italy. On the first day, we will go to the food market or to the farmer to find the best ingredients to cook the original Bolognese recipes with our personal chef.
The second day is dedicated to Modena’s food and wine culture, first and foremost to Traditional Balsamic Vinegar. We will see how it is made in a family-run Acetaia and cook a Modenese menu-based lunch with this precious ingredient.
On the third day, we will leave to Parma area, homeland to Parmigiano Reggiano (Parmesan) cheese, Prosciutto Crudo (Parma ham) and Culatello di Zibello cured meat produced in the Bassa Parmense flatland, to end our trip in the attractive Medieval village of Torrechiara on Parma hills and meet a very special winemaker…
